Simple light pudding made with apples, eggs and sugar. Topped off with a sprinkling of pistachios.
Peel and core the apples and chopped into chunks. Place in a saucepan with a little water and the lemon rind. Heat gently and cook until softended. Place the cooked apples in a seive and press the pulp through with the back of a large spoon. Leave to cool. Take a large clean bowl and whisk the eggs whites to a stiff peak consistency. Fold the whisked egg whites and sugar into the cooled apple and divide into separate serving dishes. Whip the cream and decorate the top of each serving finishing with a sprinkling of chopped pistachios.
