Pre-heat the oven to gas 6 or 200 centigrade.
Take 8 ozs of short crust pastry and roll two thirds of the pastry into a circle. Spread a little jam in the centre, leaving two inches of bare pastry edges. Chop up two bananas and place in the jam. Sprinkle with dessicated coconut, fold the bare edges of the pastry up around the slices of banana.
Roll out the remaining third of pastry, brushing this "smaller circle" with milk around the edges. Fit the smaller circle as a lid onto the larger pie. Brush top with milk and sprinkle with caster sugar. Bake for about 25 minutes.
