Jar of free running Honey

Method

Prepare the batter at least one hour before use. Seive the flour and salt into a large basin and make a well in the middle. Crack the eggs into the well and add a little of the milk. Blend together with an electric whisk then gradually add the rest of the milk continuing to mix until everything is well incorporated. Leave to stand for one hour.

Pre-heat the oven to Gas 4, 180 centigrade. Peel and core the apples and cut into 1cm thick slices. Take a casserole dish (1.75 litre) and grease well with butter Lay the apples into the dish overlapping where necessary to fit them in. Carefully pour over the honey to ensure that the apples are well coated.

Give the batter another good whisk and then pour over the apples. Use sufficient batter to cover the apples but not too deeply. Bake in the oven for one hour. Serve with Custard.
