Ingredients
350g Shortcrust Pastry
135g Golden Syrup
125g White Bread Crumbs
Grated rind and Juice of 1 Lemon
1 Teaspoon of Ground Ginger
1 Egg (Beaten)
Easy to prepare and delicious hot or cold with custard or cream.
Pre-heat the oven to Gas 5, 190 centigrade. Roll out the pastry and line a 25cm pie dish. Trim the pastry and reserve the leftovers. Warm the golden syrup gently and add the grated lemon rind, 1 tablespoon of lemon juice and the ginger, add the bread crumbs. Mix well and pour into the over the pastry. Roll out the remaining pastry and cut into strips. Form a lattice over the top of the tart with the pastry strips. Brush the lattice and edge of the tart with the egg wash. Bake in the oven for 25 - 30 minutes until the pastry is golden.
Serve hot or cold with custard or cream.
